RECIPE: Cooked Posole

Cooked Posole

2 lbs lean pork cut into 1 inch cubes
2 lg cloves of fresh garlic (chopped)
4 qts water
1- 28 oz The Authentic New Mexican frozen red chile (2-14oz)
1 lg white onion
2 lbs The Authentic New Mexican frozen posole corn
2 tsp salt
1/2 tsp oregano

1. Place pork, whole onion, garlic chopped, salt and water in a large stock pot
2. Bring mixture to a boil at high heat then reduce heat and skim foam from the top.
3. Prepare TANM red chile as directed on container
4. Add red chile sauce to the pot
5. Rinse TANM frozen posole corn
6. Add to pot and boil for approximately 2 hours or until corn pops.
7. Reduce heat and add oregano, let simmer for 1 hour
8. Adjust salt to suit taste
Serve with chopped onions, lemons, oregano and Rio Grande Flour Tortillas (where available)
